Lucky Charm Cookies Recipe: A Magical St. Patrick’s Day Treat

These Lucky Charm Cookies are soft, chewy, and packed with colorful marshmallows, making them the perfect festive treat for St. Patrick’s Day.

Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup light brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup white chocolate chips (optional)
  • 1 1/2 cups Lucky Charms marshmallows (separate from the cereal)

Instructions

  1. Preheat and Prep
    Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Mix Wet Ingredients
    In a large mixing bowl, beat the butter, brown sugar, and granulated sugar together until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  3. Combine Dry Ingredients
    In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  4. Mix and Fold
    Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Gently fold in the white chocolate chips, if using, and Lucky Charms marshmallows.
  5. Scoop and Bake
    Scoop the dough onto the prepared baking sheet, spacing the cookies about two inches apart. Bake for nine to eleven minutes or until the edges are lightly golden.
  6. Cool and Serve
    Let the cookies cool on the baking sheet for five minutes before transferring them to a wire rack. Serve warm and enjoy.
