Ingredients
For the Salmon and Veggies:
- 4 salmon fillets
- 1 cup cherry tomatoes, halved
- 1 cup asparagus, trimmed
- 1 cup zucchini, sliced
- 1 red bell pepper, sliced
- 2 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
For the Garlic Butter Sauce:
- 4 tablespoons unsalted butter, melted
- 4 garlic cloves, minced
- 1 tablespoon fresh lemon juice
- 1 teaspoon honey or maple syrup
- ½ teaspoon dried oregano
- ½ teaspoon crushed red pepper flakes (optional)
Instructions
- Preheat & Prepare:
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it. - Arrange the Ingredients:
Place the salmon fillets on the baking sheet, spacing them evenly. Arrange the cherry tomatoes, asparagus, zucchini, and red bell pepper around the salmon. Drizzle everything with olive oil and season with salt, black pepper, and paprika. Toss the veggies gently to coat. - Make the Garlic Butter Sauce:
In a small bowl, whisk together melted butter, minced garlic, lemon juice, honey (or maple syrup), oregano, and crushed red pepper flakes. - Coat the Salmon:
Brush the garlic butter sauce generously over each salmon fillet, ensuring they are well coated. Drizzle any remaining sauce over the vegetables. - Bake:
Bake in the preheated oven for 12 to 15 minutes, or until the salmon is opaque and flakes easily with a fork. If you prefer a crispier texture, broil for an additional 2 to 3 minutes. - Serve & Enjoy:
Remove from the oven and let rest for a couple of minutes. Garnish with fresh parsley or a squeeze of lemon juice for extra freshness. Serve immediately and enjoy your easy one-pan meal.
